Mmmm, Muffins

In our family these muffins are a staple. They are so simple to make (only two mixing bowls and one fork are dirtied) they bake quickly, and they taste scrumptious! I found this recipe online a long time ago so unfortunately I cannot give proper credit!

1 3/4 cup flour
1/3 cup plus 2 tablespoons sugar
2 teaspoons baking powder
1 beaten egg
3/4 cup milk
1/4 cup cooking oil
1 cup coarsely chopped cranberries

In a mixing bowl combine flour, sugar, baking powder, and ¼ teaspoon salt. Make a well in the center. Combine egg, milk, and oil; add all at once to flour mixture. Stir just till moistened and fold in cranberries (batter should be lumpy). Lightly grease muffin cups or line with paper bake cups; fill 2/3 full. Bake in a 400 oven about 20 minutes or till golden. Remove from pans; serve warm. Makes 10 to 12

Of course you can substitute anything you have on hand for the cranberries, that is just what we have in our freezer right now! Blueberries are especially good too. For all you larger families out there, you might want to double the recipe. It usually makes exactly 14 muffins, and they sure go fast!
